And now a word of thanks...

Dear Mrs. Inventor of the Green Bean Casserole,


Thank you.  I mean it from the bottom of my heart.  Thank. You.

Thank you for understanding that vegetables cannot be served out of a can alone.  They must be accompanied by ingredients high in fat, calories and sodium.  It was a stroke of genius when you married cream of mushroom soup, green beans and French's fried onions.

Oh sure you didn't invent the fried onion, but you introduced them to the world and gave them wings to fly and top other vegetables such as broccoli, cauliflower and yes, even spinach.  Like little fried angel kisses to bring life to otherwise disappointing vegetables.

Many have come behind you and, inspired by your masterpiece, have created their own versions with varying degrees of success.  Those who could be considered your apprentices have added ingredients such as cheddar cheese, butter and sour cream.  A sort of "Super Phat" salute to the original.  I believe that while they have taken some liberties, they have captured the spirit of the original.  I applaud their effort.

Sadly, others have tried to create a "healthy" version of your casserole.  Fresh green beans, low-fat cream of mushroom soup and bread crumbs are just the beginning.  I shutter to think of what has been done in your recipe's name.  Fresh mushrooms? Soy milk? I'm so sorry.  I'm afraid tofu could be next.

I remain a purist and I'm counting the minutes until 1:00 tomorrow when I will savor the first of MANY forkfuls of your creation.  

And I will do so with a very, very thankful heart.

You are crazy!!! And funny. I just have to add that I hate green bean casserole--ESPECIALLY the fried onions. I'm glad you enjoy it so much though. Have a Happy Thanksgiving!

I love, Love, LOVE green bean casserole!!! However, I have one exception to what you wrote...nothing...I repeat NOTHING that is consumed on Thanksgiving day contains any fat or calories!!! It couldn't...otherwise, we couldn't be truly thankful for it...and I am oh so thankful for pumpkin pie!!!

Well said my friend! I too LOVE green bean caserole. Tiffany, you are missing out on one of the worlds greatest foods! Sadly, I will not be enjoying my love tomorrow, but come christmas day, watch out! Happy Thanksgiving!

ummmm....I didn't want to tell you because I wanted an unbiased review...but I'm trying a new green bean casserole this year. It's so Noah can eat it...I'm substituting the sour cream with soy cream...the Cream of Mushroom soup is a special version from Whole Foods with no dairy...the crackers and onion rings are gluten free...but it will be ROCKIN'...I promise!
